After returning from a very relaxing vacation (which included no exercise), I am making a valiant effort to eat a little bit healthier. This recipe is extremely fast, includes lots of veggies, and has an easy to whip up teriyaki sauce-since the bottled versions are often loaded with salt and sugar. And no, it does not require a wok...
Ingredients: 4 boneless skinless chicken breasts 3 carrots, peeled and julienned 1 head of broccoli, with the stems cut off 1 head of bok choy, chopped Sesame Oil 12 sliced button mushrooms 3 garlic cloves, minced Teriyaki Sauce: ¼ cup low sodium soy sauce 1 cup of water 4 tablespoons brown sugar 2 tablespoons honey ¼ teaspoon ginger powder ½ teaspoon garlic powder 2 tablespoons corn starch 1.) Begin by cooking the chicken breasts for 4 minutes per side in the garlic and enough sesame oil to coat the pan. Set aside to cool and slice into ½ inch pieces. 2.) Mix the ingredients for the teriyaki sauce together in a small bowl then heat on low in a pot until thick. If the sauce becomes too thick, add a few tablespoons of water to loosen, set aside. 3.) In the same pan as the chicken, add about 2 tablespoons more sesame oil, and sauté the vegetables together with the teriyaki sauce on medium heat until they lose their firmness. You still want to retain the crunch of the carrots and broccoli, but the bok choy should be wilted and the mushrooms should be browned. 4.) Add in the chicken and toss together on low heat, just to allow it to absorb the sauce. 5.) Serve immediately over brown rice. * Tip: If you want to add some heat to the stir-fry, add a squirt of Sriracha Sauce after adding the chicken. **Chicken can be substituted with shrimp, beef, or tofu for a vegetarian option.
